Chickpea & Tru-Nut Burger

Ingredients
  • Cooking spray
  • 2 tbsp oil
  • ½ cup water
  • 1 sweet potato
  • ⅓ cup quinoa
  • 1.5 cups chickpeas, cooked
  • 3 scallions (optional)
  • 1 tbsp minced ginger
  • 8 tbsp Tru-Nut Powdered Peanut Butter
  • 1 cup green peas
  • ¾ tsp salt (or to your liking)
  • 1 tsp crushed garlic
  • 2 tbsp lemon juice
  • 2 tsp cumin seeds
  • Dash of crushed red pepper
Instructions
  1. In a small saucepan, add quinoa and water. Bring to a boil and then lower heat to a simmer. Cook for 20 minutes, or until water absorbed, and set aside.
  2. Dice the sweet potatoes and cook in boiling water for about 15 minutes, or until soft. Peel.
  3. Add chickpeas, garlic, scallions, salt, ginger, cumin and lemon juice to the sweet potato. Mix until blended.
  4. Add the cooked quinoa, green peas and Tru-Nut to the sweet potato mixture and stir. Add more salt, red pepper or lemon juice if needed.
  5. In a medium skillet coated with oil over medium heat for about 1 minute until it sizzles, then turn heat to low. Take the sweet potato mixture and form into burger patties. Cook for 8-10 minutes and then flip, cooking for an additional 8-10 minutes. Makes 10-12 burgers.
