Carrot Peanut Bread

  • 3.5 c whole wheat flour
  • 18 ounces carrot puree
  • .5 c Tru-Nut Powdered Peanut Butter
  • 4 tbsp olive oil
  • 1 tbsp honey or preferred sweetener
  • 1.5 tsp dry yeast
  • Handful of pumpkin seeds
  1. Mix Tru-Nut, carrot puree and yeast in a bowl.
  2. Add flour and stir until the mixture is very thick. Add olive oil and stir. Place mixture in baking pan(s) and let rise for 45-60 minutes.
  3. Bake at 400 F for 25-30 minutes. Let it cool and serve.
