Chickpea & Tru-Nut Burger

Ingredients
- Cooking spray
- 2 tbsp oil
- 1/2 cup water
- 1 sweet potato
- 1/3 cup quinoa
- 1.5 cups chickpeas, cooked
- 3 scallions (optional)
- 1 tbsp minced ginger
- 8 tbsp Tru-Nut Powdered Peanut Butter
- 1 cup green peas
- 3/4 tsp salt (or to your liking)
- 1 tsp crushed garlic
- 2 tbsp lemon juice
- 2 tsp cumin seeds
- Dash of crushed red pepper
Instructions
- In a small saucepan, add quinoa and water. Bring to a boil and then lower heat to a simmer. Cook for 20 minutes, or until water absorbed, and set aside.
- Dice the sweet potatoes and cook in boiling water for about 15 minutes, or until soft. Peel.
- Add chickpeas, garlic, scallions, salt, ginger, cumin and lemon juice to the sweet potato. Mix until blended.
- Add the cooked quinoa, green peas and Tru-Nut to the sweet potato mixture and stir. Add more salt, red pepper or lemon juice if needed.
- In a medium skillet coated with oil over medium heat for about 1 minute until it sizzles, then turn heat to low. Take the sweet potato mixture and form into burger patties. Cook for 8-10 minutes and then flip, cooking for an additional 8-10 minutes. Makes 10-12 burgers.
